Zucchini packages with BBQ ricotta

Ingredients

  • 2 courgettes
  • 1 onion chopped
  • 125 grams mushrooms finely chopped
  • 5 sprigs of thyme
  • 125 grams ricotta
  • 2 tablespoons Parmesan flakes
  • 1 tablespoon lemon juice

Preparation

  1. Slice 16 nice slices of the courgettes (this can also be done with the cheese slicer, for example). Place it on a plate or kitchen paper and sprinkle with salt. Leave this alone. Pat the zucchini strips dry with kitchen paper or a clean cloth. Heat oil in a pan or on the baking tray and fry the onion with mushrooms. Add the thyme and season with salt and pepper.
  2. Stir in the ricotta and the onion mixture. Stir in the Parmesan along with lemon juice and season with salt and pepper.
  3. Place 2 slices of zucchini on top of each other to form a cross. Spread a spoonful of the ricotta mixture in the center where the 2 zucchini slices meet. Fold over the ends of the zucchini one by one to form a square package. In the meantime, heat the E-Braai to 180 degrees, the barbecue will be up to temperature in about 4 minutes.
  4. Brush the zucchini packets with olive oil and then place on the grill plate, put the lid on. Bake the zucchini packets for 3 to 4 minutes per side. Serve the zucchini packets as an appetizer or as part of the main meal.

TIP:

  • You can use the leftover zucchini for a stir-fry dish, omelette with vegetables or soup.
  • Do you find it difficult to fry onions and mushrooms (eg at the campsite)? Leave out the onion and mushrooms and season the ricotta with thyme leaves alongside the lemon, salt and pepper.
