Bread pudding with lemon curd


  • 350ml whipped cream
  • 2 eggs
  • 50g granulated sugar
  • 1½ tsp vanilla essence
  • 150g lemon curd
  • 150g baguette or other (old) bread
  • 100g blueberries
  • Icing sugar, for garnish
  • Olive oil, for greasing

  1. Extra required: an oven dish and pizza stone.
  2. Grease the baking dish with olive oil. Heat the whipped cream in a pan until it comes to a boil. Remove the pan from the heat and set it aside for a while.
  3. In a bowl, mix the eggs with sugar and vanilla and beat well. While whisking, gradually add the warm whipped cream until you have a batter.
  4. Add a layer (spoonful) of lemon curd on the bottom of the baking dish. Tear the bread into pieces and scatter it over the baking dish. Cover with the rest of the lemon curd and sprinkle with the blueberries.
  5. Divide the batter over the dish and let it soak in the bread (about 10 minutes). Finally, drizzle the bread pudding with a teaspoon of sugar.
  6. Place the bowl on the pizza stone on the barbecue. Heat the bread pudding for 15 to 20 minutes. After baking, let the pudding stand for 10 minutes.
  7. Sprinkle the bread pudding with powdered sugar before serving.
