Potato skewer with bacon and courgette

Ingredients

  • Half a sliced courgette
  • 1 red pepper, cut into thick slices
  • 8 slices of bacon
  • 4 potatoes
  • olive oil
  • salt & pepper

Preparation

  1. Soak the skewers in water for half an hour beforehand.
  2. Season the courgette slices with salt and pepper and brush with olive oil. Fry the courgette slices and pepper pieces on the baking tray. Slide the vegetables to the side and fry the bacon on the same baking tray.
  3. Slice the potatoes.
  4. Thread potato slices onto the skewer alternating with bacon, courgette and pepper. When doing so, try to mimic the shape of the potato.
  5. Brush the potatoes with oil and season with salt and pepper.
  6. Fry the potatoes all around and cook on the grill of the barbecue.
